Make sure villagers get scared by the zombie and area ble to sleep, also consider putting grass blocks higher up and see if golems spawn, which means you'll have to higten ur water stream
I built my farm without the knowledge of locational stuff ( thanks vktech for pog explanation) and it still worked, and all other casual farmers on the servers it worked for too. It could very well be that your server runs a modified version of mc like paper or spigot or bukkit.
Heightmap stuff aside, endermen farms have a limit on how good they can perform so if you build a overkill farm at y50 it should likely still give you max possible xp and you can make it look good

There can be parts where the guardians just fall down the pipe without sticking to honey, its quite rare though. Powdered snow raises efficiency by a bit, but its a legit alternative. I accidentally made my farm so big that I got to 15tps from all guardians using portals, so maybe add a additional kill chamber portal in the nether if you plan on getting rates and xp

When I first started using it I noticed the filter items would drop out into the storage which will of course mess up the system. I figured out that I had flown off too far away while it was actively sorting. I plan on making a chunk loader hooked up so it runs while the storage system is active but for now I just make sure it's done before I go anywhere.
You should change the flair to show that this is modded. My server (1.12) is the same we have the loot table but not the carpet rule. The problem is that husks require sky access to spawn, so any farm you build will not work during the daytime and will work slowly in the nighttime. In 1.12 there is a glitch where mobs can always spawn at y=256 because they think that it is light level 0 there, even in the daytime. There is also obviously sky access up there as no blocks could possibly be placed above the spawning floors. The only problem is that spawns are very slow up there due to the heightmap thing. To get around this we use an rng farm that spawns the husks at y=256. In 1.16 it will be a lot harder unfortunately because the y256 glitch is fixed and the rng manipulation I believe is removed or vastly more difficult to the point of impossibility. Sorry I don’t have a good farm design for you but I thought this input might be useful.
Paper alters the game to such extent that you cant use redstone, so a world eater is off limits. Paper is intended to use for big servers, not small groups of friends making redstone stuff
The server Im playing on isnt quite a hardcore technichal server. Altough due to a economy existing the server has become quite technical, so making perimeters for your farms is worth it. The server uses a fork of PaperMC but redstone deffo gets altered, I doubt that the owner will change the server to fabric due to plugins breaking and so on....

Also are you sure villager type doesn’t matter? I’ve sat next to this thing for 30 minutes and no iron golems have spawned

Check carpets mod ai tracker command, or gnembons video on iron farms and you will solve all of your questions

Thats not a bad habit, thats how you are supposed to do it. Its impossible to do 1 motion on small targets consistently.
