Mapango Macarons ๐Ÿ˜… ~8mg per macaron

  1. Mango ganache with a passion fruit center. By far one of my favorites. Since I can't imagine only eating one macaron I tend to dose them on the lower side.

  5. It's a meringue based "cookie" made with egg whites, almond flour and sugar. Its usually filled with ganache, buttercreams, curd, jams etc.

  6. Do you have a recipe with instructions? I donโ€™t think people realize how difficult it is to make a perfect macaron (macaroon is something different entirely), until they have tried to make them. Almond flour is not cheap or easy to find as regular flour. To get the perfect flat shell that even on top and bottom that is the right crispyness and the inside of that shell to be chewy and have the correct proportion of filling is difficult. Iโ€™d love to know because there is a reason why they are expensive ($30 a dozen where I live) and my 6 year old absolutely loves them.

  7. Congrats! These macarons are perfect! I think it was smart adding the cannabis to the filling and not the shells. I made meringue cookies a couple weeks ago with canna sugar, and the residual oils from the canna sugar totally deflated the meringue. They were still tasty but definitely didnโ€™t look the way I intended.

  8. Thank you.. I think the trick to that is replacing a bit of the regular sugar with canna sugar. I've made macarons that way and they turned out well.

  11. I was thinking of making my espresso chocolate ganache macarons. However, the issue I had with macarons are they are great for sharing a batch among a few people, but they do not last very long. Anything past 3 days and they get crunchy and stale. So, not the best for making a batch to enjoy for a while like you can other confections.

  12. Mmmh. I've never had an issue with that. They're usually more likely to turn a little mushy than hard..perhaps it has to do with. my fillings? I can usually keep it in the freezer for at least a month and they are fine.
