Made some soft baked birthday cake protein cookie bars! (~39 cals each)

  1. 🌈INGREDIENTS🌈 14g light butter 30g granulated sweetener (I use @lakanto monkfruit) 15g unsweetened applesauce 20g all-purpose flour 20g vanilla-based whey/casein protein (*see notes; I use @pescience snickerdoodle flavor) 1/8 tsp baking powder 40ml almond/cashew milk Sprinkles!!! (I used about 2g)

  2. hahaha I mean why not!!! 😁 honestly I made another batch for myself yesterday morning thinking it'd be for snacking and it ended up just being a meal. It's also so good with coffee! (may have had some ~minor~ bloating from all that sweetener but was so worth it)

  3. Was going for cookies when working on this recipe but the dough ended up being more like batter instead, so I threw it in a mini loaf tin and out came these soft baked protein cookie bars! They remind me of sugar cookies, but practically melt in your mouth.

  4. These look so cute! They remind me of this one mexican bread my parents would always buy. I’m sure these taste great too πŸ”₯

  5. I made these yesterday! 10/10! Nice, soft texture and the loaf was nicely baked and not crumbly at all! I halved the recipe and replaced half of the flour for oat fiber, and it came to only 87 calories for a result the size of 3-4 fiber one brownies!

  6. Amazing!! Can't believe you made these already! Thanks so much for sharing and it's cool to hear that oat fiber worked well as a sub! I'm always worried about textural changes from playing around with OF but I might need to give it a shot myself now. πŸ˜‹

  7. Hahaha love it. Erythritol for daaaays..or dare I say bloat for days πŸ˜… I fully support your YOLO though and would so appreciate some update on the allulose when you get around to trying it πŸ™

  8. aw thank you!! tbh I'm not sure about microwave as I've never done that before. maybe try 1/2 or 1/3 of the recipe first and microwave at increments and check each time?? πŸ˜…
