Which Vegetables shrink the least when cooked?

  1. Thick asparagus stays pretty much the same size, especially if you boil it. Boiled/blanched veggies in general do not shrink too much.

  2. Depends how much you are cooking them. A light steam or boil retains most of the volume/moisture. Anything roasted for a long time almost starts to dehydrate and turn into crispy nothings.

  3. If you wait till your eggplant is a little older, not dangerous but you know if you go another day it belongs in the bin, then chop and put it in the air fryer it will get puffy and taste awesome.
