Because 90% of these where owned by broke ass teenagers in late 90's and it was cheaper to remove then replace...... I was one them but my fat ass all ways kept the a/c lol. Hardest part is pulling the dash and coughing up the money for all the parts, they went up in price a decent amount the last couple years.
The answer to your question is another question, do you want to do it right? I did the full r134a conversion kit from LMR on my car that includes a new evaporator and everything. Assuming your car hasn't had the wiring harness all cut up, that's the best way to do it. Had mine for 2 years now and it's been absolutely perfect with no leaks or recharging needed.
Pull the dash (it’s not that bad) and put a new heater core and evaporator in it then piece together the rest. Make sure you can trace the harness back if it’s been cut.
It wouldn’t be difficult, per se. Looks like a previous owner deleted both the a/c and heat. Biggest difficulty will be wiring.
Cracked AC condenser is the main reason I've seen. Unwilling to pull the dash to replace it
I removed my A/C because teenage me thought that A/C was sissies. It’s my single biggest regret.
I deleted mine because the carb style a/c wasn’t going to work with my efi swap. Now I thoroughly regret the decision much younger me made.

It's not bad, it's just a lot of parts. My heater core died and being in South Alabama I've lived without it fine since I bypassed it
Are any of the parts still in the dash? If so, it should be easy, assuming the working wasn’t cut
Not hard. Did it this past spring on my car after I deleted it off the car 20 years ago. Stupidest thing I ever did.
