  2. stuffed bell peppers! you can fill them with any toppings you have on hand then pop them in the oven for about 30 min.

  3. quesadilla: tortilla + cheese + anything (mushroom, spinach, tomato, egg, pesto) or nothing, fold tortilla in half and microwave or, even better, put small amount of olive oil in a pan, heat a bit, put the quesadilla, then flip it over. makes it crispy on the outside and melty on the inside.

  4. zucchini! I usually sauté it before and then add to the pasta sauce.

  5. mmm hummus. you can make it lower in carbs by adding other vegetables, so you use less garbanzo beans (or leave them out altogether). like add roasted/grilled eggplant or zucchini.

  6. I think you are missing a crucial step: cut the grilled cheese diagonally to make 2 triangular pieces! I don't know why but it tastes sooo much better! It almost feels more cheesy this way?
