C channel may bring it back flat. I would flip and weight the underside before installation though. Just my penny thought. Nice top and good luck with it.
It could also be it's not stored flat and the epoxy has not fully cured yet. clamp and weight the underside on some melamine (untextured). You got this far it's only a little bow. You can fix it!
Just get some weight on the underside to reverse the cup and check frequently. when flat Install the c channel and attach the legs. If this is for yourself, store in the room you plan to use it in while it's weighted down for a couple of weeks and give it time to acclimatise.

Dang ok, I'll have to get some coarser grit. I tried using a 150 grit and it felt like I made more imperfections appear haha
